Food ingredients proteins have a significant value depending on their specific functionality, solubility, taste, and purity.

Biological functionalities typically have an even higher value when separated and recovered. One of the classical examples is the use of lactoferrin recovered from whey. When used in infant formulas or other health and nutritional products, the value of lactoferrin typically increase several hundred percent.
Proteins recovered by use of chromatographic method are typically high in purity (+95%), highly soluble and free of off-taste substances and discolour. These are all characteristics for high value protein products.
